Spring vs. late-summer honey: tasting the seasons

Because our bees forage within a few miles of the hive, every harvest is a snapshot of what's blooming that month. It's the opposite of the blended, identical honey you get at scale, and it's our favorite thing about keeping bees this way.

Spring honey tends to be pale and bright, with floral, almost citrusy notes from early blossoms. It's delicate, lovely drizzled over yogurt or stirred into tea where it won't get lost.

By late summer, the same hives produce something deeper: amber-gold, with caramel and a longer finish. That's the jar we reach for on toast, or alongside a sharp cheese.

Our tip: keep both on the counter and taste them side by side. Once you notice the difference, ordinary honey never quite tastes the same again.
