What “raw” really means, and why we never heat our honey

Walk down any grocery aisle and you'll see “raw,” “pure,” and “natural” on nearly every honey jar. The words aren't regulated the way you'd hope, so they can mean almost anything, including honey that's been heated, ultra-filtered, and shipped halfway around the world.

For us, raw means exactly one thing: honey that leaves the hive and reaches your jar without ever being heated above what the bees themselves keep it at. We extract cold, strain only the wax cappings, and pour. That's the whole process.

Why the fuss about heat? Gentle as it sounds, warming honey to make it flow faster through machinery quietly strips out the delicate enzymes, aromatics, and trace pollen that make raw honey worth eating. Heat it enough and you've essentially got flavored syrup.

So we keep it slow and cool. It means smaller batches and the occasional crystallized jar, but it also means the honey actually tastes like the season it came from.
