Honey-Glazed Roasted Carrots
Raw honey turns humble carrots into something special. A quick glaze in the last few minutes of roasting gives them a glossy, caramelized finish.

Ingredients
- 1 lb carrots, peeled and halved lengthwise
- 2 tablespoons olive oil
- 2 tablespoons Local Honey
- 1 tablespoon butter, melted
- 2 sprigs fresh thyme, leaves picked
- Flaky sea salt and black pepper
Method

Heat your oven to 425°F and line a baking sheet with parchment.

Toss the carrots with olive oil, salt, and pepper, then spread them in a single layer.

Roast for 20 minutes, until just tender and starting to caramelize.

Whisk the honey and melted butter together, brush it over the carrots, and roast 8 to 10 minutes more until glossy and golden.

Scatter with thyme and a pinch of flaky salt, and serve warm.
