Soothing Hot Honey Lemon Tea
The simplest way to enjoy raw honey, and our go-to at the first scratch of a sore throat. Keep the water warm rather than boiling so the honey stays raw and keeps its enzymes.

Ingredients
- 1 cup hot (not boiling) water
- 2 tablespoons fresh lemon juice
- 1 to 2 tablespoons Local Honey, to taste
- 1 cinnamon stick (optional)
- 2 thin slices fresh ginger (optional)
Method

Let just-boiled water sit for a minute so it stops boiling. Raw honey is best stirred into warm water, not boiling, so its natural enzymes survive.

Add the lemon juice and honey to your mug and stir until the honey dissolves.

Drop in the cinnamon stick and ginger, top with the hot water, and steep for 3 to 5 minutes.

Taste, add a little more honey if you like it sweeter, and sip slowly.
